I love crisp oat cookies, they're for sure on my top-5 cookie list. A hint of cinnamon and nutmeg add some depth.

  • 80 g rice flour
  • 80 g gluten-free oats
  • 0.5 tsp. baking soda
  • 1 tbsp. arrowroot powder
  • 60 g coconut blossom sugar
  • 0.5 tsp. cinnamon
  • 1 pinch of nutmeg
  • 60 g almond butter
  • 2 tbsp. oat milk
  • 2 tbsp. maple syrup
  • 2 tbsp. walnut oil
  1. Preheat your oven to 160 C and line a baking sheet with parchment. Add the rice flour, oats, arrowroot powder, baking soda and the spices to a mixing bowl. Stir thoroughly. Now add the almond butter, oat milk, maple syrup and walnut oil and combine everything to a cookie dough using your hands.


  2. Take about a tablespoon sized amount of the cookie dough and roll into ball. Place them all on the prepared baking sheet and press flat slightly with a fork. The cookies spread out quite a lot, so make sure you space them out. Now bake the cookies for about 12-15 minutes until golden.
