These vegan and gluten-free Apple Oatmeal Muffins are perfect for a quick breakfast on a busy day. Grab and go. A light and airy muffin with apples spiced with cinnamon, ginger and cardamom topped with crunchy oatmeal streusel. Naturally sweetened with apple, maple syrup and birch sugar.
- 180 g apples (the sweeter, the sweeter the muffin)
- 80 g buckwheat
- 120 g rice flour
- 25 g sweet lupine flour
- 120 g gluten-free fine oats
- 1 tsp cinnamon
- Good pinch of salt, ground ginger, cardamom (each)
- 1 tsp baking powder
- 0.5 tsp baking soda
- 180 g birch sugar
- 100 g vegan butter at room temperature
- 80 g maple syrup
- 280 g oat milk
- 2 tbsp apple vinegar
- 25 g gluten-free fine oats
- 2 tbsp rice flour
- 2 tbsp maple syrup
- Pinch of cinnamon

Preheat the oven to 200 degrees C and grease a 12 count muffin tin.

Let's prepare the streusel first. Combine all ingredients in a small bowl and mix well. Set aside.

In a large bowl, add the buckwheat, rice flour, lupine flour, oats, all the spices, baking powder and baking soda. Combine well. In a separate bowl, cream the vegan butter, birch sugar and maple syrup together. Chop the apples into small pieces and set aside.

Add the apple vinegar to the oat milk and pour the mix into your bowl with the dry ingredients. Combine well and add the creamed vegan butter. Fold in the chopped apples and divide the batter evenly between the 12 muffin moulds. Sprinkle the crunchy oat streusel on top. Bake for 20 minutes or until the apple oatmeal muffins are nicely golden.

You can use a store-bought gluten-free flour mix too. If you do, substitute the buckwheat, rice flour and lupine flour with the equal amounts of the gluten-free flour mix.
