Lemon Poppy Seed Cake

To me, few herbs evoke so strong associations like rosemary. Its herbal sweetness reminds me of sweltering summer days full of pure bliss. Rosemary is an exceptional herb when baking a lemon poppy seed cake. The sweetened cake, still sour-at-heart is the perfect base for delivering a full-on Mediterranean feeling to your senses. A perfect lemon cake must be sweet, sour and above all moist, drenched in fact. This version contains no gluten, no white sugar or dairy, but focuses on pure lemon goodness.

A vegan lemon poppy seed cake with a hint of rosemary that tastes like those blissful summer days.

  • 150 g gluten-free oats
  • 50 g buckwheat flour
  • 50 g rice flour
  • 1 pinch of salt
  • 2 tsp. baking powder
  • 2 tsp. corn starch
  • 3 tbsp. flaxseed flour (ground flaxseed)
  • 120 ml water
  • 50 g poppy seeds
  • 2 tsp. ground rosmary
  • zest of 2 lemons
  • 250 ml oat milk
  • 100 ml rice syrup
  • juice of 1 lemon
  • 5 tbsp. rice syrup
  1. First, pour the flaxseed flour in a small glass and add 120ml of plain water. Mix it well and set aside to swell. Preheat your oven to 180 degrees C. Now, line a 30cm cake form with parchment. Grind your oats to get oat flour and combine with the buckwheat and rice flour. Then add the salt, baking powder and starch. Using a separate bowl, mix your flaxseed brew with the poppy seeds, lemon zest and rosemary. Now add the rice syrup and rice milk and mix until well combined. Add the flour mix to your wet batter and mix well. Pour everything into your lined cake form and bake for about 35 minutes or until your skewer comes out clean. Now while your cake is in the oven, prepare the lemon syrup to achieve a super moist lemon cake. Heat the lemon juice and the rest of the rice syrup in a pan on low heat until warm.

    Get your cake out when done and poke some tiny holes into it, best to use your skewer for that. Now pour the lemon syrup over the still hot cake and let cool in the form completely.
