Frosted Cinnamon Loaf
It has been a busy couple of weeks, but I’m so delighted to be back with another recipe. I dare say the last non-chrismasy recipe. Getting ready for the Christmas Bakethlon. I totally made that word up, but can we all make it a thing? As the days are getting shorter and colder, this frosted cinnamon loaf warms you right up. Like a good, honest hug or a steaming mug of chai. Uh, a slice of the cinnamon loaf and a mug of chai would actually make the perfect afternoon treat. The vegan frosting is made of white beans and tastes (remotely) like anko, the Japanese sweet bean paste. In case you really don’t like the subtle taste of beans in the frosting, the cinnamon loaf also works quite well without any frosting.
This recipe for a vegan Frosted Cinnamon Loaf is:
- Vegan (no dairy, no eggs)
- Gluten-free
- Nut-free
- Oil-free
- No added white sugars

A frosted cinnamon loaf fit for colder days. Cinnamon warms you up like a good hug.
- 300 g gluten-free oats
- 80 g buckwheat flour
- 2 tbsp. baking powder
- 1 pinch of salt
- 1 tsp. ground ginger
- 3 tbsp. cinnamon
- 10 pitted dates
- 50 g maple syrup
- 250 g apples
- 300 ml oat milk
- 1 can of white beans (approx. 240g)
- 2 tsp. cinnamon
- 2.5 tbsp. maple syrup
- 10 pitted dates

Preheat your oven to 200 C. Line a rectangular cake form (approx. 30 cm) with parchment paper. Add your oats to a food processor and grind then until you get a fine flour. In a bowl, add the oat flour, the buckwheat, baking powder, salt, ginger and cinnamon and combine it all well. Now place the dates into your food processor and blend well. Roughly chop the apples and add them to the date paste. Add the maple syrup and blend well again. Add half the milk to the mix and blitz it. Add the mass to your dry mix together with the oat milk. Combine it all well and pour the mix into the prepared cake form. Bake for approx. 35 minutes.

Cinnamon frosting
Add the dates to your food processor and blitz. Drain the water from the bean can and add the beans, cinnamon and the maple syrup and blitz thoroughly again. Let the cake cool off completely before spreading the frosting evenly over the top of the cake. Dust of with cinnamon.
