Cherry Poppy Seed Cake

Sooo, when I received a big bucket of hand-picked cherries, I thought freezing them would be a super idea so that I could bake something delicious in like January or February when I’m sick with Christmas bakes. Yeah, so these frozen cherries lasted, uhmmm, until September. So much for my brilliant idea. BUT, you guys, so worth it. My Cherry Poppy Seed Cake is so so good. And your kitchen will smell amazing too! The airy gluten-free sponge topped with cherries and delicious crunchy oat crumbles goes perfectly with coffee. Not to mention, poppy seeds pair so well with cherries. Add a hint of cinnamon and some citrus notes to round it all up.

Delicious vegan Cherry Poppy Seed Cake with an airy sponge cake and crunchy oat crumbles. A plant-based and gluten-free recipe suitable for vegan baking rookies.

  • 120 g buckwheat flour
  • 100 g chickpea flour
  • Pinch of salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 20 g arrowroot powder
  • 1 tbsp stevia
  • 1 tsp cinnamon
  • 4 tbsp poppy seed
  • 280 g apple sauce
  • 80 g almond butter
  • Zest of 2 lemons
  • 40 g maple syrup
  • 200 ml oat milk
  • 1.5 tbsp apple vinegar
  • 270 g cherries (pitted)
Oat crumbles
  • 45 g jumbo oats (gluten-free)
  • 3 tbsp buckwheat flour
  • 2 tbsp coconut blossom sugar
  • 2 tbsp almond butter
  1. Preheat your oven to 180 degrees and grease a 23cm (9") wide deep dish. Simply mix all your dry ingredients together in a big bowl: flours, baking powder, soda, salt, cinnamon, stevia, poppy seeds. Now add the lemon zest. Combine well. Mix the apple vinegar with the oat milk. Add to the dry mix. Now mix in the apple sauce, almond butter and maple syrup. Combine well and pour into the greased dish.

     

Oat streusels
  1. In a bowl, add the jumbo oats, buckwheat, coconut blossom sugar and the almond butter. Combine, using your hands, until you get lovely crumbles.

     

  2. Place your cherries on your dough and crumble the oat streusels on top. Bake for approx. 35 minutes or until nicely golden.
