Almond Raspberry Loaf

I love my little food blog and everything I do for it: the recipe creating, the testing, the baking, the food styling, the shooting, the editing, the writing, the translating (yuup, all content available in German too). Lately, though, I can’t stop but asking myself, what I could improve. What to do more. How to serve people interested in joining a plant-based lifestyle better or folks with dietary restrictions. Because I believe, no matter the diet or lifestyle, you should find joy in food. Joy in preparing your food and joy in eating it too. I mean why eat something if it doesn’t do anything for you – and that includes the nutritional side of things as well as an emotional side – why bother eating it? So I’m here, trying to figure out, how to do more, to be of better service and I guess, the only constant is change itself. What are you struggling with right now? Raspberries and almonds are just meant to be together. It's a true match made in taste heaven. A hint of cardamom and ginger makes this Almond Raspberry Loaf vegan baking perfection

  • 100 g almond meal (skinned almonds)
  • 120 g rice flour
  • 130 g buckwheat flour
  • 1 tbsp. coconut flour
  • 1 tsp. baking soda
  • 2 tsp. cream of tartar
  • 1 tsp. cardamom
  • 0.5 tsp. ginger
  • 2 tbsp. milled flaxseed
  • 8 tbsp. warm water
  • 100 g almond butter
  • 80 g date syrup
  • 250 ml oat milk
  • 2 tbsp. apple vinegar
  • 200 g frozen raspberries
  • some almonds flakes to decorate
  1. Preheat your oven to 200 degrees C and line a rectangle cake form (approx. 28cm) with a sheet of baking parchment. Prepare the flaxeggs: whisk the milled flaxseed together with the warm water. Set aside.

    Mix the almond meal and all flours together with the baking soda and the cream of tartar in a bowl and combine well. Add the spices, combine well and add the frozen raspberries. I find that it's easier to work with frozen raspberries as they won't immediately squash to pulp when you work the batter.

    Using an electric hand mixer, whisk the almond butter and the date syrup together until smooth. Add the flaxegg and whisk again. Combine the oat milk and apple vinegar and add it to the mix. Repeat the whisking. Now add this to your flour mix and gently fold it under. You don't want to knock all the air out of the batter so don't overwork it! It's totally ok, if you can still see specks of flour.

    Pour the batter into your prepared tin and sprinkle some almonds flake on top for good measure. Bake in the lower half of your oven for 50 to 60 minutes.
