Almond Cake with Persimmon Kaki

Sooo, what the heck is a persimmon kaki? Am I right? When fully ripe, persimmon kakis taste rich and sweet with a pleasantly light tanginess. They should be super soft so that their sweet, almost jelly-like flesh (think ripe peaches) seems to burst at the slightest touch. Another exotic fruit that hits our fruit bowls, after mangos and pomegranate are a new household stable. But, of all these fancy fruits, persimmon kaki do grow in Switzerland. Yay! Persimmon kaki is often the last fruit that reminds us of those blissful summer days. When all leaves are shed, the orange persimmon kakis appear like bright little suns against the grey and naked trees.

This almond cake with persimmon kaki is another perfect autumnal treat for vegans. Get your hands on some kakis and start baking.

Persimmon Kaki Cake with almonds is another delicious autumnal treat.

  • 100 g gluten-free oats
  • 30 g buckwheat flour
  • 100 g ground almonds
  • 2-3 tsp. tahini
  • 80 g slivered almonds
  • 1 tsp. baking powder
  • 50 g coconut blossom sugar
  • 2-3 vanilla pods
  • 0.5 tsp. cardamom
  • 4 ripe persimmon kakis
  1. Preheat your oven to 180 C. Grease a round cake form (approx. 18cm diameter) with tahini (bottom and sides). Sprinkle the almond slivers evenly over the bottom of the form. Add your oats to a food processor and process until you get a fine oat flour. Combine with the buckwheat flour, ground almonds, baking powder, coconut blossom sugar and cardamom. Mix it all well. Now remove the kaki stems and cut them into big chunks. Scrape the vanilla out of your pods and add it to your food processor along with the kaki chunks. Blend it all well until smooth. Combine the kaki puree with your dry ingredients and gently pour the dough into your prepared form. Bake for 30-35 minutes and let it cool off completely before flipping the cake upside down.
